MANJULA’S CHICKEN BIRIYANI
INGREDIENTS
FOR THE RICE
Basmati rice:5 cups
ghee 2 tsp
sunflower oil:2 tbsp
clove(carambu):7 nos
cinnamon(karuvapatta):2 stick of 2 inch
cardamom(elachi/elakkai):7 nos
lemon juice:2 tbsp
hot water:6 cups
salt to taste
FOR BIRYANI CHICKEN MASALA
chicken ( BIRYANI CUT/LARE PIECE ):1 kg
sunflower oil : 4 tbsp
clove(carambu):5 nos
cinnamon(karuvapatta):3 stick of 2 inch
cardamom(elachi/elakkai):7 nos
onion chopped:3 cup
small onion(shallots):1 cup
green chilly:7 nos
garlic clove:10 nos
ginger chopped:2 tbsp
chilly powder :2 tsp
ginger garlic paste :4 tbsp
coriander powder:1 tsp
black pepper powder:1 tsp
turmeric powder:11/2 tsp
garam masala :2 tbsp
lemon juice:2 tbsp
mint leaves:1cup
coriander leaves:1cup
ghee :2 tbsp
Egg:7 nos
salt to taste
fried onion,rasin,cashew nut for garnish
METHOD

  • PREPARATION OF RICE:Wash basmati rice and soak basmati rice in water for 15 min.after that drain water from rice,keep aside.
    -Heat oil and ghee in a heavy bottom pan .put cinnamon,clove ,elachi saute it in low flame.add basmati rice saute it for 2 min.
    -finally add hot water,lemon juice and salt .
    -allow the rice to cook 7 to 8 min.cover it with a lid . biryani rice is ready.
    -PREPARATION OF CHICKEN BIRYANI :Marinated the chicken piece with a half tsp of turmeric powder, lemon juice,black pepper,salt for 30 min.after that fry in oil till half cook.after that keep aside.
    -Heat oil in a heavy bottom pan.put cinnamon,clove ,elachi saute for second .
    -after that put onion chopped,small onion(shallots),saute for 5 to 6 min in high flame.
    -then put garlic chopped, ginger chopped, saute for 1 min.
    -then add ginger garlic paste,green chilly ,saute for 3 min.
    -then lower the flame, put all the powder ingredients like coriander powder,black pepper powder,turmeric powder stir well for 1 min.
    -add mint leaves,coriander leaves saute for 2 min and add garam masala stir well.
    -finally add fryied chicken pieces ,mix well.cook for 5 to 7 min.cover it with a lid.stir occasionally .
    -When chicken masala is done ,put the biryani rice into it mix well.on top put ghee.close with a lid.
    -cook for 2 min in low flame.after that off the gas.serve it .
    -garnish with fried onion,rasin,cashew nut and egg.
    -MANJULA’S CHICKEN BIRYANI is ready.
    Note:Good for 7 to 8 servings .
