MUSSEL BIRIYANI
INGREDIENTS
FOR THE RICE
Basmati rice:3 cups
ghee:1 tbsp
sunflower oil:2 tbsp
clove(carambu):4 nos
cinnamon(karuvapatta):2 stick of 1 inch
cardamom(elachi/elakkai):4 nos
lemon juice:1 tbsp
hot water:4 cups
salt to taste
FOR MUSSEL MARINATION
Mussel cleaned :1/2 kg
chilly powder :1 tsp
Turmeric powder-1/2 tsp
coriander powder:2 tsp
fish masala powder:1 tsp(optical)
ginger and garlic paste:1 tbsp
water :as required
OIL :as required
salt :as required
FOR MUSSEL BIRIYANI MASALA
sunflower oil :2 tbsp
ghee :2 tbsp
clove(carambu)3 nos
cinnamon(karuvapatta):2 stick of 2 inch
cardamom(elachi/elakkai):4 nos
onion chopped:2 cup
turmeric powder:1/2 tsp
garam masala :1 tbsp
mint leaves:1/2 cup
coriander leaves:1cup
tomato :2 no
curd:1 tbsp
for grinding
green chilly:5 nos
garlic clove:5 nos
ginger chopped:2 tbsp
salt to taste
fried onion,rasin,cashew nut for garnish
METHOD

  • PREPARATION OF RICE:Wash basmati rice and soak basmati rice in water for 15 min.after that drain water from rice,keep aside.
    -Heat oil and ghee in a heavy bottom pan .put cinnamon,clove ,elachi saute it in low flame.add basmati rice saute it for 2 min.
    -finally add hot water,lemon juice and salt .
    -allow the rice to cook 7 to 8 min.cover it with a lid . biriyani rice is ready.
    MUSSEL FRY
    -clean the mussel .wash with salt water.
    -mix all the ingredients like chilly powder,Turmeric powder,fish masala powder,coriander powder, ginger and garlic paste,a little water,salt.
    -make a thick paste.rub on both sides of the mussel.keep it aside for 5 to 10 min.
    -heat oil in non stick pan .shallow fry the mussel till brown color on both side for 7 to 8 Min.low flame
    -mussel fry( Kadukka fry) is ready.keep it aside.
    -PREPARATION OF MUSSEL BIRIYANI :
    -Heat up the same pan .use the same oil and add more ghee.put cinnamon,clove ,elachi saute for second .
    -after that put onion chopped saute for 4 to 5 min in high flame.
    -then put grinned item (garlic chopped, ginger chopped,green chilly )saute for 5 min.add chopped tomato saute for 3 min.
    -then lower the flame, put the powder ingredients like turmeric powder stir well for 1 min.add curd mix well.
    -add mint leaves,coriander leaves saute for 2 min and add garam masala stir well.
    -finally add half of fried mussel ,another half of mussel fry used for topping.
    -When MUSSEL masala is done ,put the biryani rice into it mix well.on top put ghee.close with a lid.
    -cook for 2 to 4 min in low flame.after that off the gas.
    -mussel biriyani is ready.
    -transfer the mussel biriyani in serving vessel .on top put half of mussel fry and garnish with fried onion,rasin,cashew nut and tomato flower.
    -MUSSEL BIRIYANI is ready.
    Note:Good for 4 to5 servings .Kadukka in malayalam.mussel seafood,do not over cook.clean well.we can buy cleaned mussel.wash it 4 to 5 time until water is clear.
