kozhikotta – Palm sunday special
INGREDIENTS
FOR DOUGH
rice flour: 1 cup
hot water:1 cup
coconut oil:2 tbsp
salt to taste
FOR FILLING
COCONUT SCRAPED:1 CUP
JAGGERY POWDER:1 CUP
CARDAMOM:1/4 Tsp
METHOD
-make syrup of jaggery. add coconut scraped and cardamom powder into it .heat it .keep aside.
-heat water, add oil and pinch of salt.when water boil add flour little by little and mix well.off the flame.after some time ,when it is warm knead it into a soft dough .
-make balls ,spread the dough to make cup shaped moulds(or we can use moulds of any shaped).place 1 tbsp of filling and cover from all sides to make kozhikotta shape.
-steam it for 7 to 10 min.
-kozhikotta is ready .
